Heat the oven to 400°F. Mix the almonds and water together and let them sit for 5 minutes.

Heat water in a pot on medium heat, cook the pasta in boiling salted water for 3 minutes less than the packet instructions. Drain.

Insert the bread and garlic clove in a food processor to create breadcrumbs for the topping. Once you're finished with that, put the crumbs in oil.

To make the béchamel sauce, heat the oil in a large saucepan over medium heat. When hot, add the flour. Turn the heat to low and cook, stirring, for a couple of minutes to form a paste (don’t let it brown).

Gradually add the milk, a couple of tablespoons at a time, until about half has been combined, then stir in the rest of the milk. Cook, stirring, for 5 minutes. At this point, the sauce will be very loose.

add the béchamel, nutritional yeast, mustard powder, garlic powder, salt, nutmeg, and pepper. Blitz until completely smooth, scraping the sides down twice.
