Ingredients

2 cups Whole wheat flour
2 tsp Baking powder
1/2 tsp Baking Soda
1/2 tsp Sea salt
1 cup Brown sugar or your preferred dry sweetener
1/2 cup Vegan margarine melted
2 tbsp Fresh lemon juice
2 tbsp Lemon zest plus more for garnish
1.5 cup Sweetened non dairy milk
Powdered sugar for dusting, optional

This vegan Lemon Cake is easy to make and so tasty, too! You can finish it by dusting with powdered sugar, or frost with your favorite frosting. Either way it is delish!

Preheat oven to 375 F
Get a round pan (9 inches preferably) and thoroughly coat the pan with vegan margarine.

In a large bowl, add 2 cups of whole flour, 2 teaspoons of baking powder, ½ teaspoon of baking soda, ½ a teaspoon of sea salt, 1 cup of brown sugar (or your prefered dry sweetener), once everything is in the bowl, mix well with a dry whisk.

Once you've stirred the bowl, it's time to add ½ cup of vegan margarine, 2 tbsp of lemon juice, 2 tbsp of lemon zest, and 1½ of non dairy milk, stir very well, add the mixture to your pan

Insert the pan in the oven and bake it for 40 minutes. To check that your Lemon cake is ready, insert a toothpick in the middle of the cake, if the toothpick is clean, your cake is ready, if not give it some more time, If the top of the cake has already gotten the yellowish color, apply foil paper so the cake doesn't burn.

let the cake cool for 15 minutes Once the cake is ready, turn the cake onto a wire rack, and run a knife around the perimeter.

If you'd like, you can add fruits to your desire, once you're done, your last step is to dust the powdered sugar on the cake.
