This is an example of a hearty Greek dish that is vegan-friendly. Serve with slices of fresh, whole grain bread and a side salad.

Add 2 tablespoons of olive oil in a large pan, add 1 large chopped onion and 4 minced garlic cloves, , once it gets a golden color add the rest of the ingredients. |
